Toppings (optional): sliced black olives, fresh basil
- In a large bowl, whisk together dip mix, oil, and vinegar; set aside.
- Cook pasta according to package directions. Drain and rinse with cool water to prevent sticking.
- Meanwhile, slice pepperoni into rounds, if using. Dice pepper and onion. Slice cherry tomatoes in half. Cut bocconcini into bite-size pieces. Place pepperoni, veggies, and cheese in bowl with dressing.
- Add pasta to bowl; toss to mix. Add additional toppings, if desired.
