- Heat butter or oil in Sauté Pan. Slice chicken thighs in half, add to pan, and brown.
- Meanwhile, thinly slice carrot.
- Add carrot and mushrooms to pan. Stir-fry 3 min, or until mushrooms start to soften.
- Stir in seasoning and wine; bring to a boil. Cover and reduce heat to medium-low. Simmer 10 min. Uncover and simmer for 3–5 min, or until sauce thickens.
Swap low-sodium chicken broth for dry red wine or use a combination.
For a deeper flavour, marinate chicken in red wine and seasoning overnight. Reserve the marinade and use in pan to cook chicken.
Serve with 1 cup mashed potatoes.
